Ingredients

  • 6 lb ground turkey (93/7)
  • 3/4 cup plain Greek yogurt
  • 4 Tbsp melted butter (or olive oil)
  • 3/4 cup panko breadcrumbs
  • 2 Tbsp (6 tsp) kosher salt
  • 2 tsp black pepper
  • 2 Tbsp garlic powder
  • 2 Tbsp onion powder
  • 1 1/2 tsp dried sage
  • 1 tsp dried thyme
  • 1 tsp cayenne pepper
  • 1 tsp fennel seed, crushed (optional)
  • Neutral oil, for cooking (about 1–2 tsp per batch)

Instructions

1) Mix the seasoning slurry

In a large bowl, whisk together 3/4 cup Greek yogurt, 4 Tbsp melted butter, 2 Tbsp (6 tsp) kosher salt, 2 tsp black pepper, 2 Tbsp garlic powder, 2 Tbsp onion powder, 1 1/2 tsp dried sage, 1 tsp dried thyme, 1 tsp cayenne pepper, 1 tsp crushed fennel (optional).

2) Combine turkey gently

  1. Add 6 lb ground turkey to the bowl.
  2. Sprinkle 3/4 cup panko over the top.
  3. Mix with your hands 30–45 seconds max, just until evenly combined (don't knead).
  4. Rest mixture in the fridge 10 minutes.

3) Press patties

  • Weigh out 2 oz portions (target: ~48 patties).
  • Press using a mini patty mold with light pressure (don't compact).

4) Cook (skillet method)

  1. Heat a nonstick or cast iron skillet over medium heat.
  2. Add 1 tsp neutral oil.
  3. Cook patties: 3 minutes first side, flip, then 2–2.5 minutes second side.
  4. Two options: eat now — cook to 165°F in the center; batch + freeze (par-cook) — pull at 150°F, cool, then freeze. On reheat, microwave until the center hits 165°F (food-safe for ground turkey).

5) Batch freeze

  1. Lay patties on a parchment-lined sheet pan (use patty papers between layers).
  2. Freeze 60–90 minutes until firm.
  3. Transfer to freezer bags. Label: "Turkey breakfast patties – 2 oz – date".

Tips

  • Medium heat wins: high heat dries turkey fast. Medium gives you browning without overcooking.
  • Stop at 160°F: turkey goes from juicy to dry in one extra minute.
  • Reheat trick: microwave covered with a damp paper towel (35–55 sec for 1 patty) to keep moisture.
  • Kid sandwich move: reheat, slice thin, and stack into a breakfast sandwich with cheese.

Macros (per 1 patty, 2 oz): ~113 cal · ~13.5g protein · ~0.7g carbs · ~5.5g fat. Estimate based on 6 lb 93/7 ground turkey, 3/4 cup nonfat plain Greek yogurt, 4 Tbsp butter, and 3/4 cup panko; actual macros will vary by exact turkey/yogurt brand and cooked moisture loss.

Batch note — half batch, substitutions

Scaled to 3 lb 5 oz ground turkey (~26 patties) with two substitutions that worked:

  • 1/3 cup buttermilk in place of Greek yogurt (thinner, so panko volume held at 1/2 cup).
  • 1/2 cup 4C seasoned breadcrumbs with Pecorino in place of panko. Because the crumbs carry salt, cheese, and seasoning: kosher salt cut to 2 tsp and garlic powder to 2 1/2 tsp; onion powder 3 1/4 tsp, pepper 1 tsp, sage 3/4 tsp heaping, thyme 1/2 tsp, cayenne 1/2 tsp, fennel 1/2 tsp optional.
  • Rule when using seasoned crumbs: fry one test patty after the rest and taste before pressing the batch.

Par-cooked to 150°F and frozen (~21 patties banked after dinner).
