Ingredients

Chicken Marinade: 2½ lb chicken thighs, 3 tbsp olive oil, zest of 2 limes, 2–3 cloves garlic (grated), 1½ tsp cumin, 1 tsp smoked paprika, 1 tsp chili powder, ½ tsp onion powder, 1¾–2 tsp kosher salt, ¾–1 tsp black pepper.

Enchilada Sauce Base: 1 tbsp olive oil (if pan is dry), 1 small onion (diced), 1 green bell pepper (diced), 2 cloves garlic (minced), 1 tsp cumin, ½ tsp smoked paprika, ½ tsp chili powder (optional), 1 cup red enchilada sauce, ¼ cup chicken broth, ½ cup sour cream or Greek yogurt, 1 tsp lime juice, salt to taste.

Assembly: 4–5 large tortilla wraps (torn, toasted), 2 cups Monterey Jack, ¾ cup Mexican 4-cheese blend, ½ cup cheddar, butter or oil for the dish.

Fresh Finish: 3–4 cups shredded cabbage, 1½ tbsp lime juice, 1 tbsp olive oil, ¼ tsp salt, ½ cup cotija, lime wedges.

Instructions

  1. Marinate the chicken at least 2 hours (up to overnight).
  2. Sear chicken 5–6 minutes per side until browned, pull at 165°F, rest 10 minutes, slice. Don't clean the pan.
  3. Toast torn tortillas at 375°F for 8–10 minutes until crisp; cool.
  4. Build the sauce in the same skillet: soften onion and pepper, add garlic, stir in spices, add enchilada sauce and broth, scrape fond, stir in sour cream and lime juice.
  5. Lower oven to 325°F. Layer toasted tortillas, chicken, sauce, and cheese 2–3 times; finish with cheese and cover with foil.
  6. Bake covered 20 minutes, then uncover 5–10 minutes until melted and browned. Rest 5–10 minutes.
  7. Toss cabbage with lime juice, olive oil, and salt; serve on top with cotija and lime wedges.

Tips

  • Marinade time is critical — overnight is best.
  • Don't skip toasting the tortillas or layers go soggy.
  • The sauce base is already balanced; resist adding extra ingredients.
  • Fresh slaw on top is non-negotiable for the crunch and acidity.
  • Leftovers improve after a day in the fridge.
