Ingredients
Chicken:
- 1.5 lbs boneless skinless chicken thighs (recommended) or chicken breasts
- 1 Tbsp olive oil
- 1 tsp dried oregano
- 1 tsp paprika
- 1 tsp garlic powder (or 2 cloves garlic, grated)
- ½ tsp cumin (optional, but great for gyro vibes)
- 1 tsp kosher salt
- ½ tsp black pepper
- 1 lemon (for finishing)
Veg (make this the half-plate):
- 1 large onion, sliced into ¼–⅜" half-moons
- 2 bell peppers, sliced
- 1 Tbsp olive oil
- ½ tsp kosher salt
- ¼ tsp black pepper
To serve:
- 4 pita pockets
- ½–¾ cup tzatziki + feta spread (store-bought is perfect)
- Optional: crumbled feta, parsley, sliced cucumbers, sliced tomatoes
Instructions
Step 1: Char the veggies
- Slice onion + peppers. Pat dry if they're wet.
- Toss veggies with 1 Tbsp olive oil, ½ tsp salt, ¼ tsp pepper.
- Cook (choose one):
- Sheet pan: roast at 450°F for 18–25 min, tossing once, until browned at the edges.
- Skillet: cook in a large hot skillet 8–12 min, stirring occasionally, until charred and crisp-tender.
Crisp veggie rules: don't crowd the pan; keep heat high; don't add any sauce/liquid until the end.
Step 2: Season the chicken
Toss chicken with 1 Tbsp olive oil, 1 tsp oregano, 1 tsp paprika, 1 tsp garlic powder, ½ tsp cumin (optional), 1 tsp salt, ½ tsp pepper.
Step 3: Cook the chicken
- If using thighs (recommended): heat a skillet over medium-high. Add chicken and cook 5–7 min per side until browned and cooked through (or 170°F internal). Rest 5 minutes, then slice.
- If using breasts: pound/butterfly to even thickness. Cook 4–6 min per side until 155–160°F internal, then rest 5 minutes (carryover brings it to safe temp). Slice thin.
Step 4: Finish + assemble
- Finish chicken with a squeeze of lemon (start with ½ lemon).
- Warm pitas.
- Assemble each pita with a generous layer of charred peppers/onions (make it veggie-forward), sliced chicken, and a big spoon of tzatziki + feta spread.
- Serve with extra veggies on the side so the plate stays half vegetables.
Tips
- Timing win: start the veggies first; cook chicken while they roast/char.
- Don't burn garlic: if using fresh grated garlic, mix it into the chicken seasoning and cook at medium-high (not ripping hot) to avoid bitterness.
- Holding: if you need to hold chicken, cover loosely and keep warm; don't leave it uncovered in a hot pan (dries out).
- Kid mode: serve as a plate (chicken + veggies + pita) with sauce on the side.
- Leftovers: store chicken + veggies separately; reheat, then assemble fresh with spread.
