Crispy skillet potatoes with onion, two paprikas and a little cayenne heat.
Serves: 4 | Total Time: ~35 minutes
Ingredients
- 2 lb Yukon Gold potatoes, 3/4-inch cubes
- 3 Tbsp vegetable oil
- 1 Tbsp butter
- 1 medium yellow onion, diced
- 1 tsp kosher salt, plus more for the water
- 1/2 tsp black pepper
- 1 1/2 tsp sweet paprika
- 1/2 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/4 tsp cayenne
- 2 Tbsp chopped chives
Instructions
- Boil potatoes in well-salted water until the edges just soften, 5 to 6 minutes. Drain and steam dry 5 minutes.
- Mix salt, pepper, both paprikas, garlic powder and cayenne.
- Heat oil in a 12-inch cast-iron skillet over medium-high. Add potatoes in one layer, undisturbed 5 minutes.
- Turn and keep cooking, turning every few minutes, until crisp, 8 to 10 minutes.
- Push potatoes aside, add butter and onion to the center, cook until browned, about 5 minutes.
- Toss with the spice mix for the last minute. Finish with chives.
Tips
Spices last: paprika scorches fast over high heat.
Dry potatoes crisp: give them the full rest after draining.
