Instructions
0) Optional quick rinse (Yaya-style)
If you want that traditional touch: toss chicken with 1 tbsp apple cider vinegar + cold water for ~30 seconds, then drain and pat dry.
1) Season chicken
In a bowl, season chicken with 1 tsp salt + 1 tsp cumin + 1 tsp oregano + 1/2 tsp pepper + 1 tsp smoked paprika (optional).
2) Sear chicken
- Heat a heavy pot over medium-high. Add 1–2 tbsp vegetable oil.
- Sear chicken in a single layer (work in 2 batches if needed) 2–3 min per side until browned.
- Move chicken to a plate (it will finish cooking later).
3) Cook the sofrito base
- Reduce heat to medium.
- Add onion + bell pepper with a pinch of salt. Cook 5–7 min until softened, scraping up browned bits.
- Add garlic with the vegetables and cook 30–60 seconds.
- Add chopped tomato (or crushed tomatoes). Simmer 4–6 minutes until the tomato breaks down.
- Optional: stir in 1 tbsp tomato paste and cook 60 seconds for deeper flavor.
4) Blend the sofrito
- Transfer the cooked veg mixture to a blender.
- Add 1 cup broth (start here; add more only if needed) and blend until smooth. If you prefer extra-smooth sauce, blend longer and add small splashes of broth until it moves easily.
5) Simmer chicken in the sauce
- Pour blended sofrito back into the pot. Add 1 bay leaf.
- Return chicken + any juices to the pot.
- Bring to a gentle simmer, then cook partially covered (lid slightly ajar) 10–12 min, stirring once or twice.
- Check early: pull chicken at 160°F and let carryover finish to 165°F.
6) Add potatoes and simmer
- Add 11 oz baby potatoes to the pot. If the stew looks tight, add a small splash of broth/water so the potatoes are mostly submerged.
- Cover and simmer 8–12 min (partially covered is fine) until potatoes are tender.
7) Finish
- If the sauce is too thick, add a splash of broth/water. If it's too thin, simmer uncovered 2–3 minutes.
- Taste and adjust: salt first, then a squeeze of lime/lemon.
- Add heat at the end if you want.
Tips
- Blending = flavor everywhere: this turns the pepper/onion into a cohesive sauce that coats the chicken.
- Don't burn the garlic: always add it with the softened veg, not alone, and keep it to ~60 seconds.
- Chicken breast timing: start checking early; breast goes dry fast if you overshoot.
- Kid-friendly default: keep it mild in the pot; bring hot sauce to the table for adults.
