Ingredients
For the Chicken and Mushrooms:
- 1 1/2 pounds chicken thighs (boneless skinless, or bone-in skin-on)
- Kosher salt and pepper to taste
- 1/2 cup plus 2 tablespoons olive oil, divided (or use avocado/vegetable oil for high-heat cooking at 450°F to avoid smoking)
- 1 pound mixed mushrooms (such as shiitake and cremini), stemmed and halved if large
- 1 lemon, thinly sliced, plus extra slices for garnish
For the Parsley Sauce (optional):
- 1/2 cup finely chopped parsley, plus more for garnish
- 6 tablespoons extra-virgin olive oil
- 2 tablespoons red wine vinegar
- 1 large garlic clove, minced
- Salt to taste
Note: the parsley sauce is optional — the pan creates rich drippings (chicken fat + mushroom juices + caramelized lemon) that work beautifully spooned over rice, quinoa, or any sides.
Instructions
- Preheat the oven to 450°F and place a large rimmed baking sheet (without aluminum foil) in the oven to heat for at least 10 minutes.
- Season the chicken thighs generously on both sides with salt and pepper. If using bone-in, skin-on thighs, pat the skin dry with paper towels.
- Carefully drizzle 2 tablespoons of oil onto the hot baking sheet. Arrange the chicken in a single layer on the hot sheet and roast for about 5 minutes, until the chicken begins to brown on the bottom.
- Meanwhile, in a medium bowl, toss the mushrooms and lemon slices with 2 tablespoons of oil. Season with salt and pepper.
- Remove the baking sheet from the oven and carefully scatter the mushroom and lemon mixture evenly around the chicken. Return to the oven and roast for about 30 minutes (or 20–25 minutes for bone-in, skin-on thighs), until the mushrooms and lemon are browned and the chicken is cooked through.
- While the chicken roasts, make the parsley sauce (if using): in a small bowl, mix the remaining 6 tablespoons of olive oil with the 1/2 cup of parsley, vinegar and minced garlic. Season with salt to taste.
- Transfer the chicken, mushrooms and roasted lemon slices to a serving platter. Drizzle with pan drippings or parsley sauce (if using) and garnish with fresh lemon slices and additional parsley. Serve immediately.
Tips
- Serving suggestions: pairs beautifully with quinoa, couscous, or crusty bread to soak up the flavorful sauce. A simple green salad completes the meal.
- Mushroom variations: feel free to use any combination of mushrooms you prefer — button, oyster, or maitake all work wonderfully.
- Make-ahead: the parsley sauce can be made up to 2 hours ahead and kept at room temperature. Stir well before serving.
- Roasted lemon: the roasted lemon slices become sweet and caramelized — encourage guests to eat them for an extra burst of flavor.
- Oil choice: at 450°F, olive oil can smoke. Use avocado oil or vegetable oil if you want to avoid this, especially for the bone-in variation with pan searing.
- Pan drippings: don't skip them — the combination of chicken fat, mushroom juices, and caramelized lemon is a complete sauce on its own.
- No foil: skip the aluminum foil on your baking sheet — direct contact with the hot pan gives the mushrooms a better sear and caramelization.
