Cuisine: Asian · Dish Type: Side Dish · Prep: 5 min · Cook: 30 min · Servings: 2-3 servings per cup uncooked · Rating: ⭐⭐⭐⭐⭐
Ingredients
- Short grain white rice (sushi rice or Korean short grain) — do not use long grain rice like jasmine or basmati
- Water (amount depends on cups of rice being cooked)
Equipment: Cuckoo rice cooker (model CE-0351F or similar), fine mesh strainer or bowl for rinsing, rice paddle
Instructions
Step 1: Rinse the rice
- Put rice in fine mesh strainer or bowl.
- Rinse under cold water, swirling gently with your hand.
- Drain and repeat 3–4 times until water runs mostly clear. This removes excess starch for better texture.
Step 2: Add to rice cooker
- Put rinsed rice in the Cuckoo inner pot.
- Add water to the corresponding number line on the inner pot: 1 cup rice → fill to "1" line; 2 cups rice → fill to "2" line; 3 cups rice → fill to "3" line.
Step 3: Optional soak (recommended)
- Let rice soak in the water for 15–20 minutes before cooking. This helps with even cooking and stickiness.
Step 4: Cook
- Close the lid.
- Press the "Cook/Reheat" button (줘사/재가열). The cooker will default to white rice mode.
- Cook time: approximately 25–35 minutes depending on amount.
Step 5: Rest
- When cooking is complete, do not open lid immediately.
- Let rice rest for 10 minutes with lid closed. This allows steam to redistribute for perfect texture.
Step 6: Fluff and serve
- Open lid, fluff gently with rice paddle, serve immediately.
Tips
- Rice type is critical: always use short grain white rice (sushi rice or Korean short grain). Never use long grain rice (jasmine, basmati) — it will not be sticky and the texture will be wrong. Short grain rice has higher starch content, which creates the sticky, restaurant-quality texture.
- Water ratio: if your inner pot markings are unclear, use a 1:1.125 ratio (e.g., 1 cup rice + 1⅛ cups water). The marked lines on the Cuckoo inner pot are calibrated for perfect results.
- Rinsing matters: don't skip the rinsing step — it removes excess surface starch. Under-rinsed rice can be gummy; over-rinsed rice can be too dry. 3–4 rinses is the sweet spot.
- The rest period after cooking is essential — don't skip it. Opening too early releases steam and affects texture.
- Yield: 1 cup uncooked rice = approximately 2–3 servings; 2 cups uncooked rice = approximately 4–6 servings.
