Ingredients

Pork filling (chicharrón)

Important: buy prepared chicharrón instead of making it from scratch. Look for chicharrón prensado (pressed pork) at Latin grocery stores or in the international aisle.

If making from scratch (original recipe for reference):

  • 1 lb pork shoulder or pork butt, cut into 1-inch cubes
  • 3 garlic cloves, smashed
  • ½ tsp kosher salt
  • ¼ tsp black pepper
  • ½ tsp cumin
  • ½ tsp smoked paprika (or achiote powder for color)
  • ½ small yellow onion, chopped
  • ½ ripe tomato, chopped
  • 1½ Tbsp apple cider vinegar
  • 1 tsp Worcestershire sauce (optional but deepens flavor)
  • 2 Tbsp rendered pork fat or olive oil

From-scratch instructions:

  1. Combine pork, garlic, salt, pepper, cumin, and paprika in a skillet. Add just enough water to barely cover.
  2. Simmer uncovered over medium heat until water evaporates and pork begins to brown (~25–30 min).
  3. Once fat renders, continue cooking 8–10 min to develop color and crust.
  4. Add onion and tomato; sauté until soft and caramelized (~6–7 min).
  5. Deglaze with vinegar and Worcestershire; scrape browned bits.
  6. Cool slightly, then pulse in a food processor until thick and spreadable, slightly coarse.
  7. Stir back in 1–2 Tbsp rendered fat for richness.

Texture goal: rustic pâté — spreadable, not puréed. Flavor goal: smoky, tangy, savory, with a touch of vinegar brightness.

Cheese filling

Updated method: skip pre-melting. Toss shredded mozzarella with a little milk first so it clumps into a cohesive ball, then let it melt inside the pupusa as it cooks. This keeps shaping easy and gives you that gooey center + crispy cheese halo.

  • 1 cup low-moisture mozzarella, finely shredded
  • 1–2 Tbsp milk (start with 1 Tbsp)
  • (Optional: pinch of salt)

Prep:

  1. Put mozzarella in a bowl.
  2. Drizzle in 1 Tbsp milk and mix/squeeze with your hand until it starts to clump.
  3. If it still feels dry/crumbly, add 1 tsp milk at a time (max about 2 Tbsp total) until you can form a soft, cohesive ball.
  4. Portion into small pieces/balls for filling (this melts as you cook the pupusa).

Tip: keep the cheese portions cold while you shape; it handles cleaner. Ratio: about 1 part cheese to 2 parts pork keeps flavor balanced and melt ideal.

Masa dough

Required masa: Maseca Instant Corn Masa Flour (gluten-free). Both white and amarillo (yellow) varieties work perfectly.

  • 2 cups Maseca instant corn masa flour
  • ½ tsp salt
  • 1 cup warm water + 1 Tbsp olive oil or pork fat
  • Add more water 1 Tbsp at a time until smooth and pliable (not sticky)

Instructions:

  1. Mix masa flour and salt in a bowl.
  2. Add warm water and oil/fat gradually, kneading until smooth.
  3. Cover with a damp towel and rest 10 min before shaping.

Test: press a small ball — it should flatten easily without cracking.

Instructions

Pro move: tortilla press for 6-inch pupusas

Using a tortilla press gives you clean, uniform 6-inch discs — fast, consistent, and authentic.

1) First press (pre-stuff disc)

  • Lightly oil two plastic sheets or parchment rounds.
  • Place one masa ball (~3 Tbsp, slightly larger than before) in the press.
  • Press gently to form a 6-inch disc about ⅛ inch thick.
  • Peel off top plastic — this is your working side.

2) Fill & seal

  • Spread 1 heaping Tbsp pork filling and 1 heaping tsp mozzarella in the center.
  • Use the bottom plastic to lift edges and close around filling.
  • Roll lightly between your palms to seal.

3) Second press (re-flatten)

  • Return to press between oiled plastic.
  • Press lightly back down to ~6 inches wide and about ¼ inch thick in the center.
  • Smooth any cracks with damp fingers.
  • Small leaks are fine — that's your crispy cheese halo later.

Cooking

  1. Preheat griddle or skillet to medium-high (≈425°F).
  2. Lightly oil surface.
  3. Place pupusas and cook 1 min per side to set.
  4. Continue flipping every 45 sec until golden and blistered (~5–6 min total).
  5. Let any leaked cheese crisp.
  6. On last flip, press edges gently outward with spatula to spread cheese and form that signature "frico ring."

Tips

Freezer & reheat

  • Best stage to freeze: after shaping, before cooking.
  • Freeze flat on parchment 3 hr, then bag with parchment between.
  • Cook straight from frozen on medium heat, 6–8 min per side until hot and crisp.
  • Keeps up to 3 months frozen.

Serve with

  • Curtido (Salvadoran cabbage slaw)
  • Slightly spicy habanero salsa roja
  • Light drizzle of olive oil or melted butter for sheen
